Weekend dinner inspo!!! Who needs to go out for Mexican when you can create this delicious and healthy Taco Rice Bowl with Kefir Taco Sauce at home. Taco Rice Bowls with Uflourish Kefir Taco Sauce. Serves 4.
Ingredients
- Taco Bowl
- 1 tbsp olive oil
- 1 large brown onion, finely chopped
- 500g lean beef mince
- 2 tbsp Taco seasoning
- 450g pack microwave brown rice
- 100g grated tasty cheese
- 2 tomatoes, finely diced
- ¼ iceberg lettuce, shredded
- 1 avocado, thinly sliced
- Pickled jalapeno slices (optional)
Ingredients Kefir Taco Sauce
- 1 tbsp butter
- 1 tbsp plain flour
- 1 tbsp Taco seasoning
- 200ml Uflourish Mango & Turmeric Kefir
- 1 cup shredded Tasty cheese
Method Taco Sauce
Heat butter and flour in a small saucepan over medium heat until the butter has melted and the mixture starts frothing. Reduce heat to low, stir in the Taco seasoning then gradually add the kefir, whisking constantly, once all the kefir has been added increase heat to medium and bring to a simmer.Remove from heat, add the cheese and stir until melted.Taco BowlHeat olive oil in a large frypan over medium heat. Add onion and saute until soft. Add mince, using a fork to break up any lumps, then fry until browned. Add taco seasoning and 60ml water stir to combine.Prepare rice according to packing instructions. Divide among 4 bowls.Divide mince mixture between 4 bowls. Sprinkle cheese over the top then add tomato, lettuce and avocado. Add jalapeno slices if using. Drizzle with kefir taco sauce to serve.
